The taste of honey from stingless bees is distinct and sour. Researchers at the University of Queensland conducted research on stingless honeybees and found that their product, in addition to its distinctive taste, contains a rare type of sugar that makes it healthier.
Natasha Hungerford, the senior researcher of the study, says: We had a guest researcher from Malaysia named “Noorhasnida Zawawi” who was interested in analyzing the sugars in honey without sting. When we determined the sugars in honey, we were surprised to find a large amount of disaccharides that did not meet any of the usual standards for sugars in food.
A disaccharide is a type of sugar consisting of 2 monosaccharides linked together. The disaccharide that the researchers found was trehalulose, which consists of a fructose molecule attached to a glucose molecule. Among 5 different species of stingless bees from the Neotropical and Indo-Australian regions, researchers for the first time identified trehalulose as a major component, which was between 13 and 44 grams per 100 grams of honey from each of these species.
High levels of trehalulose in stingless bee honey have previously unknown health implications, according to researchers. Although this sugar is structurally similar to sucrose, the unusual bond between glucose and fructose in trehalulose is more stable than sucrose. This means that trehalulose breaks down more slowly in the small intestine, giving it a lower glycemic index, or GI. Therefore, instead of a sudden increase, it creates a continuous increase in blood glucose.
Low GI trehalulose is also effective in type 2 diabetes, improving glucose control and insulin sensitivity.
